Lemon balm leaves and flowers are edible. The leaves can be consumed cooked or raw, but the flowers should be eaten in their raw state.

Lemon balm is a good additive to fish and fruit dishes, and it can be used in tea or to flavor ice cream.

The essential oil that is derived from lemon balm is used to help people with bile disorders, and it is also reported to help nervous system, liver and gastrointestinal issues.

Alternatively, you can receive similar benefits from drinking tea that is made with the leaves of lemon balm.
