8. Prickly Lettuce

With a name like prickly lettuce, you might assume that this is one leafy green vegetable that you should leave alone. The truth, though, is that the young, small leaves of this plant are extremely tasty. In order to get the best results, you should harvest the tender leaves during the spring or early summer.

Prickly lettuce can be found on roadsides, in fields and in lots that have been abandoned. At full maturity, each plant can reach up to five feet tall. However, it is best to harvest leaves when prickly lettuce is only a few inches tall.
