7. Good King Henry
Some people choose to grow Good King Henry on their property, as shown in the nearby image, but this leafy green relative of American Wormseed can also be found in the wild throughout North America and Europe. The leaves can be used as a spinach replacement, and the edible shoots that the plant produces have the nickname “poor man’s asparagus.” These shoots can be harvested, prepared and eaten just like asparagus during the spring and early summer. After which time, it is best to harvest the leaves.
