2. Simple Black Pepper Jerky

Are you looking for a spicy but simply jerky recipe? If so, this just may be exactly what your palate has been longing for.

Instructions:

1. Cut approximately two pounds of venison into 1/4” thick slices.

2. Make your marinade sauce using the following ingredients:

· Two cups of soy sauce

· Three cups of amber lager or ale

· ½ cup Worcestershire sauce

· Two tablespoons of cracked black peppercorns

3. Put the meat into the marinade. Make sure that the marinade completely covers all of the venison slices. Cover the meat and marinade mixture and put it in the refrigerator for eight hours.

4. Preheat your oven to 200 degrees Fahrenheit. In the meantime, take three large baking sheets with rims and put a large wire rack onto each of them. Take the meat out of the marinade mixture and pat it down with a paper towel to remove any excess liquid. Put the venison on the racks with ¼” between each slice. Take two tablespoons of black pepper that has been coarsely ground and sprinkle it over the strips. Put the meat into the oven and cook it for approximately four hours.

5. Make sure that you let the jerky cool completely after it has finished cooking before you eat it or place it into a storage container. You can leave it on the racks throughout the entire cooling process.
