6. Drain the liquid from the butter jar.
7. Place the butter into the bowl. Mix the butter with the fork and press with a spatula to remove any air pockets that may contain any of the leftover buttermilk. If all the buttermilk is not removed, the batch will spoil in a couple of days.
8. Pour out and rinse away any remaining buttermilk with cold water.
9. Salt or season to taste.
10. Wrap butter in plastic wrap or place it in a container. Keep buttermilk and butter refrigerated.
You now have some fresh great-tasting butter for you and your family to enjoy, even when the lights go out!
