Brine Your Roast
Place your roast in a large non-reactive dish and pour the chilled brine over it. Add the remaining ingredients (pickling spices, peppercorns, garlic) and stir the mixture.
It’s important to keep your roast completely submerged during the brining process, which may require something to weight it down.
Cover your brine mixture and let this sit, refrigerated, for 7 days. Stir the brine to mix up the ingredients once a day or so.
